Chocolate Chip Ulu Cake Recipe

For many of you the word Ulu might not mean much. At least not yet!
Ulu, or breadfruit, is a fruit that grows in tropical places, including Hawaii. It is both rich in fiber and an excellent energy booster. Ulu is a great source of omega-3 and omega-6 fatty acids, which makes it beneficial for skin and hair, and is a key ingredient for keeping a healthy heart. I’m stoked to have an Ulu tree soon to fruit in my backyard! And I have access to getting them locally so creating a recipe that incorporates this fun food is something we do seasonally!

This recipe is for a dessert we came up with and make regularly for parties and potlucks. It’s gluten free, pretty healthy (for a dessert), and is irresistible with chocolate chips. Not to mention it’s a blast bringing it to events and asking people to guess the “mystery” ingredient. I’ll give you a hint, it rhymes with… hulu 😉

Chocolate Chip Ulu Cake

Ingredients:
1 1/2 Cups ripe ulu (ripe means really soft)
1 Banana
3 Eggs
2 Tablespoons coconut oil
12oz Canned coconut milk
1 tsp Vanilla extract
1 1/3 Cups Gluten free flour (I used ‘Bob’s Red Mill 1 to 1’*)
1 tsp Baking soda
1 tsp Salt
1 Tablespoon Pumpkin pie spice
1 Cup of chocolate chips (or more if you like! I use ‘Lily’s Chocolate Chips’*)
Preparation: Preheat oven to 350 degrees. In a Vitamix*, add Ulu, banana, eggs, coconut oil, coconut milk, and vanilla extract. Blend until well mixed. Add flour, baking soda, salt, and pumpkin pie spice and blend. Oil 1 or 2 glass baking dishes. Pour the batter in about 1 inch thick. You can either mix in chocolate chips with a spoon or just sprinkle them on top. Bake for 30-35 minutes. Check center with toothpick.
