Wesley’s Birthday Waffle Cake With White Sauce

Last weekend my family celebrated something momentous… my son Wesley’s first birthday! It’s crazy how fast the time has gone. The first year has been so mesmerizing. Seeing how he’s transformed from a fully reliant 8 pound being to an expressive and increasingly independent (almost walking!!!) adventurous little boy.

I totally had some mom tears thinking on Wesley turning one!!!😭 It’s hard to think on that fast first baby year being gone and all I have is memories — photos and videos. I’m so thankful for those though! And I sure look forward to the life we have ahead! I’m also feeling so grateful to God he is alive, a part of our life and growing healthily!!! Wesley is such an adventurous, loving, spunky and fun boy!!! He keeps us on our toes (that’s for sure) and LOVES his big bro Tobias. Seeing their love for each other is so beautiful! He has a special connection with his Dad and he also loves his mom snuggles and mama milk time!!!

Adam and I are pretty good about prioritizing feeding our boys healthy foods that nurture their growing little bodies. So for Wesley’s birthday party we made healthy waffles with a delicious sauce! He likes nibbling on waffles, so naturally it was his version of cake and a fun time with all of my family!

We have a twist on tradition from my husband’s family – a white sauce for pancakes and waffles, etc. When my husband was growing up his family would drizzle a homemade white sauce on their waffles. It is something he LOVED about his childhood so naturally, he wanted to continue that with our family! We got creative and came up with our own special version of a sweet white sauce, which is made of lots of healthy ingredients AND is super delicious.

This sauce is a yummy addition on waffles, pancakes and french toast and could even be a frosting for a cake! I’m calling it ‘Wesley’s White Sauce’. It was the perfect frosting for Wesley’s 1st birthday “cake” (which was a stack of waffles with white sauce and fresh fruit)! He didn’t end up eating it (haha), but I did, and it was delicious! Perks of mom life!

Here’s our recipe: Wesley’s White Sauce

  • 1 cup of raw cashews
  • 1 can of coconut milk (use all of the thick cream off the top, save rest of coconut liquid to add while blending, maybe a 1/4 cup or more to reach desired thickness*)
  • 1-2 dates (swap with xylitol for diabetic or low sugar diet)
  • 1 tsp of vanilla extract
  • 1 tsp of maple flavor extract (“optional” but adds a fun flavor, or substitute with cinnamon)
  • Pinch of sea salt

Blend all ingredients in blender or food processor till smooth. *Please note the coconut milk tip above to find desired consistency.

We enjoy this room temp or warmed up as a topping for waffles, pancakes, French toast, dip strawberries in it or simply enjoy a spoonful as a treat after dinner!

If I have guests over who are more accustom to super sweet stuff, I’ll add a little honey or xylitol to taste.

This recipe creates enough for a family of 4.
