In Need of a Chocolate Treat?

So you’ve got a little extra time on your hands. The family is all at home. Time for games, movies, good food to gather around, and don’t forget dessert! You really can’t go wrong with chocolate treats. However, lately Bethany and I have become more keen to chocolate goodies that are:

  1. made with dark chocolate
  2. not too sweet
  3. gotta have some peanut butter in it

These Chocolate Mana Bars disappear at our house (mostly because it’s hard for me to practice self-control with them!)

In Hawaiian the word “mana” means “power”. These bars are packed with energy, power, mana! Most sweet desserts high in sugar will give you a crash, but our Mana Bars are minimally sweet and provide healthy energy for your day!

Chocolate Mana Bar Recipe

Ingredients:

  • 2 cups of almonds
  • 1/2 cup of flax seeds
  • 1/2 cup of raisins or dates
  • 1/2 cup of shredded unsweetened coconut
  • 1/2 cup of peanut butter (or any nut butter)
  • 1/2 cup of melted coconut oil
  • 2 tsp. vanilla extract
  • 1/2 tsp. sea salt
  • 3 Tbsp. honey
  • 2 bars (about 8 oz.) of dark chocolate (we use 70-85% dark)

How to Make

Prepare almonds, flax seeds, raisins, and coconut shreds by processing them in a food processor. Add peanut butter, salt, and mix.

In a small saucepan melt the coconut oil, stir in vanilla and honey. Pour coconut oil into food processor and mix till it is a coarse paste.

Spoon mixture into an 8×8 glass baking dish. Pat flat with a spatula and chill in the fridge during the next step.

In a double boiler or microwave, melt the chocolate, stirring frequently so it doesn’t burn. Pour the chocolate on top of the mixture in the pan.

Place the pan in the freezer or fridge till the chocolate is hardened (30+ minutes). Cut into bars with a knife.
