Potato Salad is an awesome summer staple (I’m a HUGE potato fan 😆), especially for picnics, barbecues or trips to the beach. It’s easy, hearty and tasty!
This recipe is my favorite way to make potato salad because it includes two other foods I really enjoy – beets and Primal Kitchen Chipotle Lime Mayo.
We love to prioritize beets in our diet because they’re a great source of vitamins and minerals. This recipe is also packed with carrots and celery so you can meet your veggie quota for the day. 😉
Personally, I’m always looking for ways for the boys and I to eat more veggies. Incorporating them into a recipe with a strong flavor boost is a great way to mix it up!
The bright color of the beets makes this salad pop and the Primal Kitchen Chipotle Lime Mayo adds a zesty flavor (without any processed ingredients!). 😋 Yum!

Chipotle Beet & Potato Salad
- 1 lb of potatoes (about 2-3 large potatoes)
- 5 lb of beets (about 1 large beet)
- 2 carrots
- 3 sticks of celery
- 3 hard boiled eggs
- 1/2 cup of greek yogurt
- 1/2 cup of Primal Kitchen Chipotle Mayo
- 3 Tbsp of fresh lemon juice
- 1/4 tsp Paprika
- Salt to taste
- Optional: add a tablespoon or two of your favorite hot sauce
Boil or steam potatoes and beets. Chop cooked potatoes, cooked beets, hard boiled eggs, celery and carrots into cubes. Add to a large bowl. Stir in all other ingredients until fully mixed.
Serve chilled and enjoy this delicious spin on a classic potato salad!
