Bethany’s El Salvadorian Guacamole

My family l-o-v-e-s avocados! They are both meaty and light, satisfying and beautiful.

Not to mention, avocados have an impressive health resume: a great source of vitamins C, E, K, and B-6, as well as riboflavin, niacin, folate, pantothenic acid, magnesium, and potassium (more than a banana!). As if that isn’t enough, they also provide lutein, beta-carotene, and omega-3 fatty acids. Basically a humble health food giant.

This extra fancy El Salvadorian guacamole was our “go-to” snack and side dish during surf trips to, you guessed it, El Salvador. We were there catching waves for my film Unstoppable (coming to theaters this July!).

Mixing in a little extra veggies results in a hearty and very tasty guac! If your family is anything like mine, you’ll have a cleaned out bowl every time. Enjoy!

Ingredients:

  • 3 ripe Avocados
  • 1/2 Zucchini, finely chopped
  • 1 Tomato, chopped
  • 1/2 Onion, finely chopped
  • 1 clove Garlic, crushed
  • Fresh Cilantro, chopped
  • 1 small Lemon
  • Salt/Pepper to taste

Preparation:

Chop veggies and press garlic, squeeze lemon on top and let sit for ten or so minutes.

Scoop the meat out of the avocados into a mixing bowl. Mash.

Next, mix lemon soaked veggies and garlic with mashed avocados, add cilantro. Finally add salt and pepper taste. Mix and serve fresh!

I like to dip it with cucumbers, flax crackers and/or chips free from corn.
