Frozen Banana “Ice Cream:” A Healthy Alternative
How to make your own ice-cream alternative out of frozen bananas!
When I have an ice cream craving, my favorite way to curb it is to whip up this quick homemade alternative! Using frozen bananas, you can create a simple puree that any member of the family can enjoy as an alternative to ice cream. Even if you don’t like bananas, give this a try.
Bananas are high in potassium and contain Vitamin B6 and C. So they’re obviously good for you 🙂
First, you’ll need to plan ahead. Peel some bananas, cut them up and freeze. Once frozen, grab the rest of the ingredients and blend away!
What you’ll need:
– 1 ripe Banana* (peeled, cut & frozen) per serving
– 1/4 cup Coconut Milk (or Almond Milk)
– 1 tbsp. sliced Almonds (optional)
– 1 pinch shredded organic coconut (optional)
– A Blender or Food Processor
*If you have access to them, use Apple Bananas for naturally added sweetness!
Puree banana in the blender with half of the coconut milk; add more liquid as needed while blending. (Note: If you’re using a high caliber blender or food processor, you may not need any liquid. Just pause occasionally to mush the bananas around a bit with a spoon or spatula.) Top with almonds and shredded coconut. You can blend in, or top with, basically anything–frozen berries, dark chocolate, or whatever you like!
Topping ideas: dark chocolate mini-chips, a homemade chocolate shell, fresh berries, mint leaf garnish.
Other creative ideas: 1) use frozen mango, pineapple or berries with, or instead of, bananas, 2) blend in cocoa powder or dark chocolate chips, 3) blend in peanut butter, 4) make an “ice cream” cake out of it!
